The bulk ferment is when the yeast fully developed through rest. The dough should nearly double in size and get bubbly. The warmer the environment, the faster the dough will ferment. If you leave the dough on the counter it will take about eight to 10 hours. For a more sour dough, leave it in the fridge for up to three days for a slower fermentation.

1:09 p.m. A band performs behind the Levitt Pavilion during the Blues, Views and BBQ Festival. Preparation for the festival began up to 12 months ago, said head organizer and owner of Bobby Q’s restaurant on Main street, Bob LaRose. A tradition that began four years ago, the festival provides opportunities for lovers of music and barbecue to come together and enjoy a family oriented atmosphere in downtown Westport.
