Top 3 foods to create in the spirit of spring
Winter is finally coming to a close and Spring is on its way. This means that it’s time to start picking out new recipes for the new season. Spring is the time when you start to fix more warm-season crops such as zucchini and peppers. These three healthy recipes are a great way to get you motivated for cooking in the mind of spring.
Caprese Pasta Salad
This salad is the perfect combination of hearty pasta and garlic vinaigrette which form a healthy but satisfying meal. The mozzarella, basil and tomatoes combine to add delicious flavor which keep you coming back for more.
This dish is perfect for a packed school lunch, or an afterschool snack. Its versatility makes it the perfect recipe to make this spring.
Quinoa Stuffed Bell Peppers
When it’s your turn to make dinner for the family, it can be hard deciding what to cook but now your troubles are over. Quinoa stuffed bell peppers scream spring and are a filling meal when paired with a side dish.
This recipe is slightly more time consuming since quinoa takes about 20 minutes to cook, but it’s well worth the wait.
Eating healthy doesn’t have to be unappetizing; this dish is a perfect example.
Zucchini Pizza Bites
This recipe is one to experiment with but delicious when made with all of the right ingredients. Surprisingly these pizza bites taste pretty similar to pizza just without the crust. The flavors of pepperoni and mozzarella with the zucchini make a wonderful combination.
When making this recipe, I’d recommend using mini pepperoni slices instead of the regular size in order to get a less overpowering flavor. If you’re craving pizza but are trying to be conscious of the ingredients you use, this should be your ‘go to’ recipe.
